This chicken dish is delicious and so easy! I started making it when my hubby and I first got married and it became a huge hit!
It was so easy to put together after a busy day, but tasted fantastic and full of flavor! Now it has become a frequent meal in our house and both Miss K and Mr. Z love it too!
It pairs really well with some pasta and a fresh garden salad. I like to add some roasted veggies and a dash of the pesto to my pasta and toss to coat. Then I place my chicken right on top of pasta! I hope you enjoy this dish as much as my family and I do!

Ingredients
- 4 boneless skinless chicken breasts
- 1/2 cup basil pesto
- 2 plum tomatoes
- 3/4 cup shredded mozzarella
Directions
- Preheat oven to 400 degrees F
- Line baking sheet with heavy foil
- Place chicken and pesto in medium bowl; toss to coat
- Place chicken on a baking sheet
- Bake 20 to 30 minutes or until done
- Remove from oven and top with tomatoes and cheese
- Bake for an additional 3 to 5 minutes or until cheese is melted
